A variation on my meatball love recipe.

I created this quite by accident. It doesn’t seem to be “too oatmealy” or “too spicy/garlicky.” It hasn’t passed the kid test yet. 😉 It does stretch the meat a bit further with the extra oatmeal. This is what happens when you follow a recipe in your head and not the one you carefully wrote down!

10 pounds ground beef
10 eggs
5 cups oatmeal
2 teaspoons garlic powder
2 teaspoons black pepper
2 teaspoons salt

(as you can see, this has quite a bit more oatmeal, and quite a bit more seasoning)

Form into mini meatballs. I like to use my pampered chef mini scoop.

Bake at 350 degrees for 30 minutes or until no longer pink.

Drain on paper towels. Freeze or eat immediately!
