He typed this recipe all by himself and completely made the cake as well. I helped with the oven and removing the baked cake from the pans as it was very tricky.
Borger Family Dairy Free, Nut Free Banana cake with Chocolate Frosting.
For the Cake
1 ½ cup mashed bananas (3 medium)
2 ½ cups all purpose flour
1 ¼ cups sugar
½ cup canola oil
1/2 cup Rice Dream Vanilla Rice Milk
1 ½ teaspoons baking soda
1 teaspoon salt
1 teaspoon Baking Powder
2 large eggs
Preheat oven to 350 degrees. Grease bottom and sides only of 2 round pans with shortening, lightly flour. Beat all the ingredients in large bowl, following the order above. Pour into pans. Bake for 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool completely, and then frost.
For the Frosting
½ cup dairy free Unsalted Fleischmann’s margarine room temperature
2 ½ tablespoons honey
1 teaspoon vanilla extract
½ cup diary free 100% cocoa powder
2 ½ tablespoons water
2 ½ cups powdered sugar
Melt margarine in microwave for 45 seconds in medium sized bowl. Mix in the honey, vanilla extract, cocoa powder, water, and powdered sugar in order of shown above. Add more powdered sugar or water if necessary. Apply frosting to layer cake.
Todd and some of our childern went to our Fair Thursday night and had a WONDERFUL time. They got to see our friends show the lambs they raised through the summer. Our three year old came home wide-eyed and full of excitement. He pet a sheep! One of the main goals of the trip was to find Micah’s cake and discover what ribbon it had been awarded. They were unable to find the cake, however. I wanted a picture with the kids at the fair and with the award. Alas, it was not to be. Thankfully, on Sunday, they were able to find his ribbon. So proud to learn they gave him blue!!! So proud of my first born son. What a blessing he is to our whole family. 🙂
