This recipe is adapted from “What’s To Eat?” By Linda Coss. This is a wonderful egg, milk, and nut free allergy cookbook.
This is a very rich and delicious cookie bar! This recipe is doubled to provide bountiful snacks for the large family. You can easily “half” the recipe and spread it in a 9 by 13 inch pan.
We cannot enjoy traditional S’Mores due to our inability to find a safe graham cracker and also a chocolate bar. Amanda’s Own does sell dairy free chocolate bars like Hershey bars but it is very expensive to purchase them. Anyway- this recipe is a fun substitute. It doesn’t even feel like a substitute it is such a truly delicious treat. It reminds me of my Aunt Donna’s “famous” Congo bars, it is SO good.
Campfire “Smores” Bars
1 cup dairy free margarine
1 cup oil
2 1/2 cups brown sugar
4 tsp. vanilla extract
4 cups flour
2 tsp. baking powder
4 cups dairy free mini marshmallows
1-2 cups Enjoy Life dairy free, tree nut free chocolate chips
4 cups or 1 box honey Teddy Grahams
Preheat Oven to 375 degres.
Grease and Flour large baking dish. I believe our dish is 10 by 14. It is the next size pyrex dish LARGER than a 9 by 13.
Mix Margarine, Brown Sugar, and Oil. Stir in Vanilla and Eggs. Add Flour and baking powder. Mix Well. Fold in Marshmallows, Chocolate Chips, Teddy Grahams. We prefer to use LESS chocolate chips and make our bag of these special chips last longer. Using the whole two cups will make the bars very rich, indeed. The Enjoy Life Chips are mini chips and seem to go farther than a traditional choclate chips. Adjust the chips to your preference!! Spread Evenly in Prepared Pan. Bake 23-30 minutes until golden brown. Bars will firm up while cooling.
